Stir-fried Pork Fillet with Asparagus

Ingredients

Pork fillet 160g
Asparagus 160g
Carrot 80g
Dried mushrooms 4 nos.
Shaoxing wine 1 tbsp
Marinades:
Light soya sauce 1/2 tbsp
Sugar 1/4 tsp
Cornstarch 1 tsp
Sesame oil a little

Seasonings

Water 2 tbsp
Salt 1/4 tsp
Sugar 1/4 tsp
Cornstarch 1/4 tsp

Method

1Wash, pat dry pork and slice thinly. Add marinades and rest for about 15 minutes.
2Wash asparagus and carrot. Section asparagus. Peel carrot and then slice.
3Soak mushrooms until soft, remove stalk and then slice thickly.
4Heat oil in wok, saute the pork until partially done, add mushrooms and carrot. Toss well, sprinkle wine. Lower the asparagus, toss well. Lastly, add the seasonings, toss well.
